  • Egg yolks
  • Heavy cream
  • Sugar
  • Vanilla extract
  • Whole milk

Making ice cream custard

You may add sugar and egg yolks to the medium saucepan. Start whisking until the color turns light yellow and combine well. In another saucepan, you start heating the whole milk on medium-low heat, until it starts to simmer. Don’t stir the milk into the mixture.

Gradually add heated milk to the pan with the egg and sugar mixture, constantly stirring. The combined mixture must be returned to heat until it reaches 165º F. But, don’t bring it to a boil. Once the correct temperature is reached, remove from the heat.

Pour the custard base into an airtight container, and refrigerate until chilled to 65º F. The longer a custard base is chilled, the creamier the ice cream will be.

When the custard base is ready, stir it in vanilla bean paste and heavy cream. Pour it into the ice cream maker and process it according to the ice cream maker’s manual.
